3 medium carrots 3 eggs 3 cups flour

1 cup oil 2 cups sugar 2 cuchradas
fine ground walnuts 1 tablespoon baking

powder 1 teaspoon cinnamon 3 tablespoons

Preparation Beat eggs and add shredded carrots, oil, flour, cinnamon, ground nuts and yeast. Make a smooth mixture. Place the mixture in a greased pie pan, sprinkle with coconut and bake 25 minutes, about average temperature in oven without opening the oven door during cooking.
